Fix reindex_embeddings crash: add networkx for Unstructured xlsx.

unstructured.partition.xlsx imports networkx; without it reindex dies
mid-run after clearing Chroma. Also skip per-document ingest failures
so one bad file cannot abort the whole rebuild.
