Rebrand product to Hesychia (hesychia.ai) (#29)

Rename user-facing UI, page metadata, and docs from the AIML Operations chat
product to Hesychia. Keep live API hosts and deploy webroots; document the
hesychia.ai migration path until infra cutover.
